520 Steak is made from high quality of beef. Gradin g of beef steak is evaluated by trained panels using maturity and marbling score. However, chemi cal compositions and physical properties affected qualities of beef steak. Using of image processing to determine numerical data from beef steak images as well as to correlate numerical data to the chemical compositions and physical properties was done in this research. It was found that fat content and protein content determined from sirloin beef images (IM-fat and IM-protein) had high co rrelation to the chemical compositions those were protein, fat and moisture with R 2 higher than 0.76 in all cases. Mor eover, IM-fat and IM-protein had high correlation with lightness and firmness with R 2 of 0.98 and 0.81, respectively.
