AbstractThe demand for a low cost and high quality protein is need. "Cha-Om", Acacia pennata is a vegetable widely consumed by the Thais. Thus it was the purposeof this study to investigate the nutritive value and protein quality of "Cha-Om". The experiment was conducted by standard bioassay. The results suggested that the protein quality of 'Cha-Om' was poor as determined either by protein efficiency ratio (PER), or net protein ratio (NPR)or amino acid score. Biological value can overestimate the nutritive value of poor quality protein. The addition of good quality protein like casein can further increase the PER and NPR values of 'Cha-Om'.
