AbstractPupae in bamboo is frequently consumed by habitants in Chiangrai and Tak in the northern part of Thailand. The objective of this study was to determine the nutritive value and quality of protein in the pupae. Nitrogen content, fat, crude fiber, ash, and moisture were analyzed by method of Horwitz et al and Pearson. Iron, calcium, phosphorus, sodium and potassium were determinded by atomic absorption spectrophotometry and flame photometry. Protein, carbohydrate and fat contents were 25.5, 11.0 and 55.3 g/100 g respectively, whereas iron, calcium, phosphorus, sodium and potassium contents were 2.7, 41.1, 356.0, 609.2, 674.4 mg/100 g, respectively. The quality of pupae protein was remarkable high as the amino acid score was 92.1. The limiting amino acid was threonine. It can probably be used as one of the good sources of protein. However the toxicity test shoud be further performed.
