AbstractA novel process for the production of lecithins from soybean gum has been developed. Crude soybean oil was degummed to recover phosphatides and then the process was continued to produce "soybean lecithins". Phosphatides could be removed by using hydration process. Acetone treatment was developed to produce oil free lecithins (deoiled lecithins). Deoiled lecithins could be fractionated by alcohol treatment to produce phosphatidyl choline (PC), phosphatidyl ethanolamine (PE), and phosphatidyl inostitol (PI).
