AbstractThe use of stillage recycle in fermentation process could improve ethanolyield 6.04-13.93% It was due to excretion of some nutrient from yeast cells during distillation. To use this process in the production of alcoholic beverage such as Thai whiskey and Lao Rong (White Spirit), the quality of alcohol produced by stillage recycle process were studied. The resulted showed that sensory test could not detect the different between alcohol distilled from 0, 30 and 60% stillage recycle mash. However some different smell was detected from 100% stillage recycle mash. Gas chromatograph analysis of Acetaldehyde, Ethyl Acetate and n-Propyl Alcohol showed a little increase when 30 and 60% stillage was used and highest increase when 100% stillage was used. While, iso-Butyl Alcohol and iso-Amyl Alcohol showed the highest amount when 30% stillage was used.
