AbstractDietary fiber is a plant compound which couldn't digest in human's body. The main component is the part of carbohydrate and non-carbohydrate. Fiber has the function to resist overnutrition, blowout protrusion the diseases e.g. diabetes, constipation, large intestine inflammation etc. From fiber determination in cereal, legume, fruit and vegetable, the red kidney bean, mung bean, eggplant and sapodilla have the highest fiber while hulled rice, cucumber, gourd and watermelon have the lowest. There were also researches on fiber food products e.g. wafer made from asparagus, brand chocolate doughnut, browny etc.
