AbstractThe u tilization of by - product from rice bran oil production , defatted rice bran, was studied for its anti oxidant activity. The antioxidant compounds were extracted from commercial ly defatted rice bran with the assistance of two commercial enzymes. In order to reduce the loss of antioxidant compounds, n o enzymatic or chemical method s were used for starch and p rotein removal during the extraction . The enzymatic ally treated extracts were fractionated by gradual ethanol precipitation. Three fractions, the < 60%, 60 - 90% and >90% fractions, were obtained from each enzymatic treatment . The highest phenolic content s wa s found in the >90% fraction either by Viscozyme ( 265,56 ? 13.65 mg GAE/100g) or Pentopan ( 265,45 ? 7.49 mg GAE/100g) treatment, followed by the 60 - 90% and <60% fractions , respectively . However in the <60% and 60 - 90% fractions , the phenolic contents of ext racts treated by Viscozyme were higher than those treated by Pentopan. The profile s of the antioxidant capacities measured by either the reducing power or the DPPH radical - scavenging method confi rmed with the phenolic content result s . These all showed that the greate st antioxidant capacities were gained in the >90% fractions , followed by the 60 - 90% and <60% fraction s . Although the yield of <60% fractions were high, but these fractions demonstrated quiet low antioxidant activity. Additionally, when compared to the Viscozyme treatment, all fractions treated with Pentopan showed a lower antioxidant capacity when measured by the reducing power method
