AbstractEffects of extraction using moderate electric fiel d on antioxidant properties from Riceberry bran Piyorot Pongkasamepornkul 1 and Pitiya Kamonpatana 1* ABSTRACT Moderate electric field (MEF) is an innovation technology that can be promising for extraction processing. Many studies have reported that MEF had ability to improve mass transfer in food due to electroporation or electropermeabilization of cell me mbrane. This study aimed to evaluate effects of extraction time and frequency of MEF on total p henolic contents, total monomeric anthocyanins and antioxidant activity from Riceberry bran extraction by applying ME F. The condition of MEF extraction was optimized based on solvent extraction (conventional extraction) by varying extraction time (30, 60, 120 and 180 min), frequency (5, 10, 50 and 100 Hz ) and controlling electric field (16.67 V/cm) and temperature (25-30 ? C). The yield of antioxidants was depend ent on extraction time, but there was no significant different (p>0.05) in the yield w hen the time arrived about 120 min. Frequency could increase TPC and DPPH radical scavenging activity. Low frequency treatment resulted in higher TPC, but low DPPH radical scavenging activity. On the other hand, high frequency produced low TPC, but high DPPH radical scavenging activity. There wa s no effect of frequency on TMA. This might be because of the degradation of ant hocyanins by electrochemical reaction during applying electric field. The effect of frequency cannot be confirmed certainly and needs to conduct the future experiment. Nevertheless, both effects also s howed the efficiency of MEF on the extraction by increasing yield of antioxidants. These results suggest that applying 5 Hz for 30 min can be effectively used to extract the Riceberry bran compared to conventional extraction.
