Abstract Lipase activity in the whitening aromatic rice and bran rice were studied. Two kinds of lypolytic enzyme were found scatterly in the part of bran which contained high fat. However milled rice without bran still contained partial fat and activated lipase that can be oxidised at room temp. during storage.
